Fish and Potato “Scotch Eggs”
This recipe is the basic recipe, first time I’ve attempted cooking what are essentially fish cakes wrapped round a quails egg. So changes that I could have made, use a smoked fish instead of fresh, chopped leeks in the potato, chilli flakes in the bread crumbs. This is a recipe to read, look at what you have and come up with your own recipe.

Fruity Bread and Butter Pudding
Another bag of dry bread bought for feeding to the animals put to other uses, I’ve posted before how shops in France sell large bags of the previous days bread called Pain Dur, basically hard bread, but the bread from supermarkets can include any bread item including croissants and malted loaf, but always includes bagged breads that are still in date.

This is a first for me, I’ve eaten tongue before but never cooked it. I can imagine people turning there nose up but this is really delicious and tender, although its considered a fatty meat the fat is part of the meat with very little white fat showing and as offal its economic, cook it and eat cold on sandwiches, hot as a dinner, why not make a good amount of sauce and freeze portions of meat in sauce in foil containers. definitely worth a try.

Another recipe from my good friend Patty at COOKING ON A BUDGET,
Parmesan and Panko Pork Cutlets for dinner any night of the week. Using our marinara sauce we just made and taking the cutlets from the whole loin we purchased out of the freezer, I put together a different version of my Pork Cutlet Parmesan. Replacing regular plain bread crumbs with ground panko crumbs and adding in some basic Italian spices and lots of grated Parmesan cheese helped elevate the level of taste in this recipe.

I never throw my bones from anything away till I’ve boiled them up and saved the stock, If I need beef stock I ask the butcher for beef bones, cut them up with a saw and roast them, bone marrow is delicious served on bread, but for this recipe I used the bones from a roast chicken fried and onion and the bones, added water and boiled for 10 minutes, strain it off and use, it can also be frozen for later.

Bread and butter pudding
Usually, once a week a buy bread for the animals called Pain Dur, Hard Bread, Normally I buy from the bread shops, I get a bag of stale baguettes and other breads, I grind a couple down for bread crumbs for use in the kitchen, the rest I feed to the chickens, ducks and turkeys. Sometimes I buy from the supermarket, now this can be a mixed load of bread stuffs, occasionally pain au chocolate, croissants and Swiss fruit cakes, the load could include fruit cakes and grain breads as well, the beauty of the supermarket breads is that they are normally in date.
