I love cooking, I cook for the seasons, I cook for myself, my husband and my family, I can do cheffy but usually my food is, well, my food, I sometimes look at the photographs I take and think, mmmm a bit plain, but as I say in my intro I’m not trying to impress with my culinary skills I’m putting dinner on the table.
But then the sun shines and I’m thinking summer food, lighter food, colourful food, visually more appealing food, I love it when the sun starts shining.
Mozzarella and tomato on a plate perfectly sums up summer food usually served thinly sliced with Basil and olive oil it just shouts summer
But what it promises with looks it lacks with flavour.
Take it to another level tear up the cheese, chop up the tomatoes, rip up the basil, slice an onion, sea salt, black pepper and pour over extra virgin olive oil put into a container give it a shake and leave for a few hours in the fridge now you have flavour. Spoon onto a crispy lettuce delicious.
For dinner add hot smoked chicken, grated carrot with a dollop of mayonnaise, sliced cucumber in yoghurt serve with a cold beer or a glass of rose and there you have it, Summer.
