Ingredients
For the pastry
175 gms plain flour
25gms icing sugar
100gms cold butter
rub together then add
rub together then add
1 egg yolk
1tbsp water
Roll out the pastry to fit your pie case
For the Sponge
225gms self raising flour
225gms sugar
225gms margerine or butter
225gms eggs
Almond essence
Grated almonds
Mix all the ingredients together.Put a layer of jam and almond flakes on to pastry
Pour sponge mix on top,
Put more almonds on top
Bake at 190c till golden brown
