Some left overs to use up, Smoked salmon and egg yolks left over from my Pavlova,
That large egg yolk is a goose egg, as this was all egg yolk I added an extra egg.
Line a dish with pastry, put in the salmon, broccoli and chopped up peppers
In the eggs I added a capful of Pastis, pour the egg over the quiche and bake.
The adding of the Pastis was a experiment and a success the flavour of aniseed worked well with the salmon.
Served with Coleslaw a simple salad, balsamic reduction and potatoes and red onion, mixed with homemade yoghurt to which I added the juice of a lemon, and a little tartare sauce.
