“You can’t make bread with ordinary pastry flour” they say. Yes you can I proved it, the bread flour I have makes very heavy bread I buy it from a local mill and add it to other bread flour.
1kg plain flour
1 tbsp Castor Sugar
Lge Pinch of Salt
1/2 litre of tepid water
10gms Bread yeast
Glug of Olive Oil
In a bowl or on the work top, put the flour, make a well in the centre
Around the side of the flour, not in the well, put the sugar and the salt. Pour the water into the well and sprinkle the yeast onto the water.
Add the oil.
Start pulling in the flour into the water until it’s all incorporated.
To knead bread bring the bread into a ball then use the heel of your hand to push the bread out, bring back together and repeat and repeat and repeat.
The dough should be stretchy and elastic.
Place in a bowl and place in a warm place, the yeast will start to work and when its doubles in size, put back on a floured surface and “knock back” the bread by kneading it again.
And that’s it, bread dough.
To use the dough, bread rolls, roll into balls, put in warm place to double in size and bake at 200°c
For all these other ideas, prove till twice size before baking.
Form the dough into loaf sized breads, make a cut in the top and bake.
Role pieces into long thin rolls and plat.
Roll flat and use a pizza base, allow to prove before putting topping on.
Spread Chilli jam onto the dough, add a slice of your favourite cheese and fold the dough over itself.
Or make long hotdog rolls. Brush with milk and sprinkle with sesame seeds.
