This is a first for me, I’ve eaten tongue before but never cooked it. I can imagine people turning their nose up but this is really delicious and tender, although its considered a fatty meat the fat is part of the meat with very little white fat showing and as offal its economic, cook it and eat cold on sandwiches, hot as a dinner, why not make a good amount of sauce and freeze portions of meat in sauce in foil containers. definitely worth a try.
The tongue weighed in at 1.5kg, so needed to be cooked the slow cooker (or boil on the stove) for 3 1/2 hrs
I added an onion, a carrot and bay leaves from my bay tree to the water.
After its cooked plunge in cold water and peel the skin off the tongue.
And for eating cold that’s it, just slice thinly onto sandwiches or wraps
As a dinner, cook with onion in a little stock and serve with a sweet potato mash, Lovely
Tongue is a classic in ‘good’ cooking. With a porto or better still a Madeira wine sauce, it is to be found on the menus of the ‘upper scale’ places, rightly so. Smaller ones such as veal or pork or lambs tongues are just as delicious as the big brother from the oxen, just take less time to cook!
