This is the first time I’ve grown Bok Choy, won’t be the last, started as seed in my greenhouse they are growing well in the garden. I was looking at what else I had growing and came up with this recipe.
The stems of a Bok Choy look a little like celery and the leaves a lovely green cabbage colour.
From my garden;
Bok Choy, chop the stalks into chunks and slice through the leaves
Green beans, top and tail and chop into 1 cm chunks
Sliced onion
A couple of chopped garlic cloves
Thick sliced courgette
Sliced green pepper
Sliced mild chilies
And as it’s all green add a few sliced mushrooms and some sweet corn.
I used peanut oil, you can use any oil you have available.
Slowly fry all the green ingredients except the Bok Choy
And the mushrooms and corn.
When everything is starting to soften, add some butter, turn up the heat, throw in the Bok Choy, season, put a lid over the top and sweat the Bok Choy, just for a few minutes,
Then add Soya sauce and stir fry
Serve
Served with Chili paste Chicken.
