If you want what has to be one of the easiest dish you could possibly cook, then you should cook a Briam, this Greek dish uses what is available in the garden,The only ingredients that are constant in what ever you include are tomatoes and olive oil, lots of it.
3 large potatoes Thinly sliced
3 medium-sized Courgettes Thinly sliced
2 onions Thinly sliced
3 small Aubergines Thinly sliced
2 peppers and/or mild chillies cut in large hunks
A handful fresh flat-leaf parsley, roughly chopped
3 medium-sized tomatoes chopped or 400 g canned chopped tomatoes
2 or 3 garlic cloves sliced
150 ml extra virgin olive oil
100 ml water
Sea salt
Black pepper, freshly ground
Starting with the potato, start building the dish starting with the sliced veg, I added some leek as well, and garlic
Add the onion
More potatoes
Season with Salt and Pepper
Add the tomatoes, oil and water
Place in the oven at 200°c and cook for about 2 hours, every 30 minutes give it a gentle stir.
And serve, the oil, tomatoes and garlic make a delicious dipping oil so enjoy this Briam with salty feta cheese and lots of bread.

Normally when this happens my husband pleads with me to stop but this time he is disappointed if it isn’t there at lunchtime! A new favourite recipe that I know I will always use at this time of year. We had our own potatoes, courgettes, tomatoes, basil and parsley topped up with bought garlic, spring onions and/or ordinary onions. I have never seen this recipe anywhere before and shall now follow your blog for the same kind of feel-good recipes.
