After the delay caused by my phone line blowing down I’ve started my diet, eating less meat, lower calories and so far I havn’t had alcohol for two weeks. I’ve tested a couple of recipes, got lots of great ideas, now to cook photograph and present them to you.
I’ve started with a low calorie, meat free curry and chapatis
I was in the shops and bought this curry paste.
At home I had coconut milk
Cauliflower
Sweet Potato
Onions
Chick peas
Corriander
Rice
For the Chapatis
2 cups Flour
Milk
(Walnut) oil
salt
Cut up the cauliflower and sweet potato
Slice up an onion and fry till soft
add the veg to the onion, add the curry paste, coconut milk and corriander and cook till the veg is tender, turn off the heat and add the chickpeas.
Boil your rice.
Put the flour in a bowl add a little salt and slowly add milk to form a dough, put a tablespoon of oil into the dough then allow to rest for 10 mins.
Divide the dough into four pieces roll into balls then using a rolling pin roll them out, 3-4mm thick.
Put a chapati in a hot dry frying pan, cook on one side till it starts to brown, turn it over and cook, allow the chapati to brown all over then turn again, cook a little more, then using rolled up kitchen paper start pressing the edges of the chapati down, as you do this you will see the chapati start to rise in the middle. When they have browned remove from the pan.
Add a good tablespoon of Mango Chutney if you have it to the curry.
Plate up the rice, put the curry on top and sprinkle well with corrinader
