115 grams Low fat spread
125 grams light brown sugar,
1 large egg
1/2 teaspoon vanilla extract
95 grams all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground Mixed spice
1/4 teaspoon table salt
120 grams rolled oats
120 grams Mixed fruit, I used Raisins and Cranberrys
65 grams chopped nuts, I used Hazel nut,
Cream together the margarine, brown sugar, egg and vanilla until smooth.
In a separate bowl, whisk the flour, baking soda, mixed spice and salt together.
Stir this into the marge/sugar mixture. Stir in the oats, fruit and nuts,
Chill the dough for a bit in the fridge
Heat oven to 175°C
Spoon onto parchment or silicone sheet
Bake 10-12 Minutes
