I love summer cooking, less meat more home-grown vegetables and salads, Theres two of us living at Half Acre Farm and one chicken can last 4 days. Our last chicken provided two roast dinners, four Pies A pizza topping and three litres of soup.
Short crust pastry
2 Cooked Chicken legs
Using up some veg from sunday lunch
Diced cooked potato, broccoli, sweet corn
125gm Marscaponi
A little curry powder
Put all the ingredients (except the pastry) into a bowl and combine together, add a little salt and pepper
Line ramekins or pie dishes with pastry use half the pastry saving the rest for lids.
Allow the pastry to over lap the ramekins.
Put the chicken and veg mix on top.
Brush the overlaps with beaten egg and place the lids on top, use a fork to press the lid into the base then trim off excess pastry. Brush with egg wash
Bake at 200°C For about 30mins.
To make mushy peas, boil frozen peas till over cooked then add a teaspoon of bicarbonate of soda, carefull it can boil over, add half teaspoon of sugar and mash with a masher or a fork, delicious.
