How many people throw away stale bread and then buy bread crumbs? I guess possibly the same amount of people that throw away a meat carcasses and then buy stock cubes.
Any old stale bread I have goes into the oven after baking, I break up the bread, put it into the oven and turn the oven off, when its dry I put it through my processor and then into an air tight container for later use.
For two people,
2 chicken breasts
75gm butter
3 cloves of garlic
Chopped parsley
then for bread crumbing
2 Eggs,
Enough flour to cover the chicken
Breadcrumbs
Look at the price of chicken portions then the price of a whole chicken, so easy to portion chicken.
Don’t throw away the carcass, there’s a great soup to be made from that.
Preheat the oven to 200°C
Remove the skin from the chicken breasts.
Slide a knife into the breast to make a “pocket”.
Slide a finger into the pocket to widen the hole, although you don’t want to go all the way through the chicken its not the end of the world if you do.
Soften the butter, add chopped garlic and parsley.
Then stuff the butter into the hole,
Roll the chicken in this order, into the flour, shake off excess, the mixed eggs, and then roll in the bread crumbs,
Sometimes I like to dip it back into the egg and bread crumb again, this is entirely up to you.
Put in an oven proof dish, put any left over garlic butter on top and bake for 30 minutes.
And serve.
