I cooked a baked bean recipe awhile back, it was delicious, better than you would ever get out of a tin but it took a long time to cook and not very economical, I saw Jamie Oliver cook a recipe for Baked Beans and thought I would give it a go, I’m posting the full ingredient list here but I made this from ingredients I already had so made a couple of changes, I will write them in the list.
2 red onions
2 cloves garlic
1 fresh red chilli, (I used a quarter of a hot green chilli)
2 large carrots (peeled and cut into chunks)
olive oil
1 heaped teaspoon paprika
1 teaspoon cumin seeds( I used a teaspoon of powdered cumin)
1 teaspoon dried chilli flakes( my chilli was hot enough so didnt use flakes)
6 medium sweet potatoes
1 x 700 ml jar of passata (I used 1 x 400g tins of chopped tomatoes and 500ml passata)
2 x 400 g tins of mixed beans (I added extra tomato so used 1kg of beans)
100 ml BBQ sauce
a few sprigs fresh rosemary
1/2 loaf of ciabatta or stale bread
fat free natural yoghurt to serve
Now Jamie cooked all the ingredients in a roasting tray I cooked mine in a large frying pan and transferred to an oven proof dish before putting in the oven.
Preheat the oven to 180°c (thats 350°f in old money)
Slice the onion and chilli and puree the garlic
Add the carrot, Paprika, Cumin and if using, the chilli flakes and fry with olive oil over a moderate heat for about 20 minutes or until soft, stirring occasionally
Clean sweet potatoes and season.
Sticking to the original recipe, add your 2 tins of beans, I used white haricot and red kidney beans. use the whole contents including the juice
Add the chopped fresh Rosemary. Use dried or even omit if you don’t have fresh.
Add in the BBQ sauce.
Then put the tray into the oven, I have transferred mine into an oven proof dish.
Put the sweet potatoes in the oven as well and cook everything for about 1 hour, My beans were in for 1 hour 15 minutes.
I haven’t served mine yet, so another photo to come, but when I do, I will cut the sweet potato through the skin and push together so the potato starts to push out.
The bread will be pulled apart, drizzled with olive oil, covered in grated cheese and will bake in the oven till starting to brown.
