I do love cooking Cornish Pasties, my family enjoy eating them hot for dinner or cold for break time at work. I’m sure there is a proper traditional recipe for these all though this isn’t it, but this recipe suits me.
450g plain flour
2tsp baking powder
2tsp salt
125g butter
2 egg yolks
125ml cold water
1 kg minced beef
3 onions
Diced mixed veg, I used potato, sweet potato, suede and carrot
Salt and pepper
Boil the veg till cooked but firm.
In a mixer mix together flour, baking powder, salt, butter and egg yolks.
Slowly add water till you have a pastry, you may not need all the water.
Wrap the pastry in cling film and refrigerate for at least 1 hour.
I then cut the pastry in half and made the first three pasties, roll the pastry out as thin as you like your pasties, use a side plate as a template and cut out the circles.
Once the three were in the oven I did the next three.
Fry the onion and mince together then add the cooked veg, then spoon onto the pastry leaving a clean edge all round. season.
Brush egg wash around the edges and fold the edges together, use a fork to seal the edges, brush the pasties with egg wash.
Bake for 45-50 minutes at 180°C
Yes I know there’s veg in the pastie but decided to serve mine with roast potatoes and a pumpkin and sweet potato mash, peas and a white sauce.
Served with a cold Romanian beer.
