Looking for lots of recipes using Courgettes, this is based on a Tuna loaf I made on my old blog.
150gm Courgette
100gm Goats Cheese
100 gm grated cheese Emmenthal
100 gm flour
3 eggs
100 ml milk
100 ml of olive oil
1 package levure (baking powder)
1 tbsp chopped chives
Salt and pepper
Grate the courgette, wrap in a towel and wring out excess moisture.
Mix together the eggs, milk and oil.
Add the courgette.
Mix in the flour and baking powder.
Chop up the goats cheese.
Add the goats cheese and Emmenthal into the mixture. Season
Add the chopped chives
Pour into a mold and bake at 200°c for 40 minutes
Allow to cool for 10 minutes before leaving to cool on a wire rack.

I’m not quite sure what Courgettes are, guessing they might be a type of squash. I love the recipe though, sounds so good. I’m pinning for later, I would love to give this a try.

Joanne, a courgette is a zucchini. It looks a bit like a cucumberand if left unpicked in the ground will quickly grow larger into a marrow.:-)
