This recipe is for two cakes
280g grated courgette (about 2 courgettes)
350g golden castor sugar
225ml sunflower oil
3 whole eggs
1 vanilla pod, scraped of seeds, or 1 tsp vanilla essence
¼ tsp baking powder
1 tsp mixed spice
1 tsp baking soda
½ tsp salt (optional)
Grate the courgettes and squeeze out the liquid by wrapping in a tea towel and twisting
Whisk together the eggs, oil, sugar and vanilla
Add the courgette to the egg mix
Sift together the flour, spices, baking powder and soda.
Put the flour/spice mix into the egg/courgette mix and mix the lot together.
crumble the walnuts into the mix and stir.
Put into two loaf tins.
Bake at 160°c till brown about an hour. Check by putting a skewer through the loaf, and checking its clean on removal
