I love crumpets, I like to have them for a brunch with bacon and eggs or a tea time treat with home-made jam. Although there’s not a lot of work there’s a lot of waiting time as it is a bread. You can cook these in a frying pan with a little oil or butter but I prefer to use my pancake maker.
3 – 1/2 cup all-purpose flour
2 Tablespoon butter, melted
2 teaspoon salt
2 teaspoon sugar
2 – 1/2 teaspoons dry yeast
1 cup warm water
1 cup warm milk
1/2 teaspoons baking soda dissolved in 1/4 cup warm water
Stir together yeast and water. Let stand for 5-10 minutes.
Add warm milk, butter, salt and sugar. Add the flour and stir until the batter become smooth. Let stand for 30 minutes.
Stir in soda dissolved in water, leave to rise 20 to 30 minutes.
You can just ladle mixture onto a griddle or frying pan, but if you have rings its so much neater.
I put about a centimetre of batter into my greased pastry rings, cook on a medium heat on my pancake maker, after a couple of minutes you can lift them and check if its cooked then turn them over.
I then use the pusher to push them down onto the pancake maker and cook the other side.
