A lone duck leg in the freezer, how can I make it feed 2, I’ve put a link to my video on how to make chili and pepper jam on the bottom of this post, I used the jam as a base for a delicious duck sauce.
4-5 TBSP Red pepper and chili jam
1 Duck leg
2 eggs for an Ommelette
Rice, cooked as you like
2 Cloves Garlic
1 Red onion
Glass Red wine
Half glass Cider vinegar
I also added a sweet red pepper
Gently fry the sliced red onion and crushed garlic together
Add the sliced sweet red pepper
Add the Jam, vinegar and red wine. Gently cook the sauce, taste it now, the vinegar is to strong, within a few minutes of cooking you can taste the sweetness of the jam coming through.
Fry the duck, first of all skin side down then turn, about 2 minutes in a hot pan each side, then put in the oven at 180°c for about 12-15 minutes. When its cooked allow to rest for 5 minutes, meanwhile cook rice. Carve the duck, its difficult to make a decent job of carving a leg so get about 4 good slices then remove the rest of the meat from the legs.
Make an ommelette, a simple 2 egg omelette.
I plated these up with a small difference in the way I plated the rice, but either way, place the rice on the plate, put the smaller less neat meat on that or to the side, place the nicer slices on top, spoon the sauce onto the duck, slice the omelette and arrange on to that. Serve.
