I love ginger nuts, unfortunately so does Paul who shouldnt eat them, but once in a while you just got to make them, such a simple recipe.
110gms margarine
110gms castor sugar
110ml Golden Syrup (treacle)
225gms flour, self-raising or add 2tsp baking powder in plain flour
2tsp Ground Ginger.
Preheat oven to 180C/350F
Melt margarine, sugar and golden syrup over a medium heat, then allow to cool slightly.
Then add the dry ingredients to make a dough.
Then I forgot to take a photo but;
Once cool enough to handle, with floured hands, roll the dough into €2 size balls. Place onto the greased baking tray with enough room between each biscuit to allow them to spread during cooking. Mark the top of each ball with a fork.
Bake for 10-12 minutes, but this makes a chewy biscuit, to make a more crunchy biscuit cook for longer, but keep your eye on them.
After they are cooked leave on the baking tray for 5 minutes then transfer to a wire rack. Enjoy with a cup of coffee.
