I made a Kiwi Cheesecake, I made a couple in glasses to eat after dinner, also made a couple in bottomless moulds so I could send them to my sons.
125gm Biscuits ( I used Speculoos, but digestive, ginger nuts or similar will work fine)
50gm Butter
250gm Marscapone
5 Kiwi
Sugar.
Put the biscuits in a freezer bag and crush with a rolling-pin.
If you’re using a mould, line it with cling film.
Melt the butter and mix it in a bowl with the crushed biscuit, then spoon into a glass or lined mould. Put in the fridge to let the butter set with the biscuit.
Peel cour and chop 3 Kiwi’s then puree with a fork and stir into the Marscapone.
You can now build your cheesecake as you like, in the glass I put some Marscapone then another layer of biscuit (don’t forget to chill it again if you do this) or you could just put a lot of Marscapone on top of the biscuit.
Once you have the cheesecake built top with peeled sliced Kiwi.
If you used a mould chill it well and then use the cling film to help ease the cheesecake out of the mould. If in the glass chill and serve.
