Lots and lots of courgettes in the garden so I’m making sure none go to waste.
200gm grated courgette
150g castor sugar
1 egg
125ml vegetable oil
200g plain flour
A pinch of salt
1/2 teaspoon bicarbonate of soda
1/4 teaspoon baking powder
1 teaspoon ground cinnamon
2 teaspoons lemon juice and zest
Grate the courgette
Wrap the courgette in a tea towel and wring out the moisture
Mix sugar, Lemon Juice and zest.
And Pour over courgette
Mix all the other ingredients together.
And stir into the courgettes.
Mixed
Pour into a mold.
Bake for 50 minutes at 160°c, cool for 10 minutes.
Then turn onto a rack to cool.
