After using my oven I take any stale bread I have, cut it up and put it in the warm oven with the door open, this drys out the bread, then I blend it in my mini processor and store in an air tight container.

Dip the flattened chicken breast first into flour, shake off any excess, dip into the egg, making sure the chicken is coated, and finally dip into the bread crumbs.
Fry the chicken till golden brown on both sides then just before serving squeeze lemon juice over the fried chicken.
