Just 2 ingredients to make this delicious low carb alternative to fried rice, I rather spoiled the low carb part by serving it with a sweet and sour chicken though.
Fresh Cauliflower
3 eggs
I added some peas to give it some colour but that’s an extra and not nessacery
Cut off heads of cauliflower and blitz in a processor
Into rice size pieces
Like this, actually looks like rice.
Put a little butter in a frying pan, add the butter and the eggs, season and cook slowly, stirring all the time,
If using add cooked peas, then serve.
