There are a lot of recipes for Magic Custard Cake on the internet, I’ve just slimmed this one down and it worked. The idea is you get a thin crust, a moist custard filling with another thin crust on top.
4 eggs (whites separated from yolks), room temp
1 tsp vanilla extract
3/4 cup sugar 100g
1 stick butter, melted/125g
3/4 cup self raising flour 100g add 2tsp baking powder to plain flour
2 cups milk lukewarm 500ml
Icing sugar for dusting cake
Separate the eggs and whip the whites to a soft peaks
Mix the egg yolks and sugar till creamy add melted butter and vanilla and mix together for 2 minutes
Add the flour and mix in.
Mix in the milk and then fold in the whipped egg whites a 1/3 at a time.
Pour into a lined and greased pan, about 22cm X 22cm square.
Bake at 165°c 325°f for 45-50 mins
remove from tray
Turn it over and remove the paper and sprinkle with icing sugar.
Enjoy, especially warm.
