I bought some fruit that was near the end of its life at not a lot of money, most I’ve turned into jam, I was left with 4 nectarines to use up and decided to make a cobbler.
4 or 5 Nectarines, peeled de-stoned and sliced.
Juice of half lemon
1 tsp Nutmeg
1 tsp Cinnamon
For the batter
100 gms butter
Pinch of salt
1 tsp Baking powder
Mix together the Sugar, cinnamon, nutmeg and lemon juice together.
To make a syrup
Add the fruit and coat with syrup.
Put in an oven proof dish and bake for 10 minutes at 180°c
Rub together Butter, Flour, sugar, salt and baking powder
Slowly add milk while whisking to make a batter
When the fruit is cooked, spoon the batter over the top
Return to the oven for about 40 minutes or until browned.
