The shells from 1kg of prawns (makes 2 portions)
1 Clove of Garlic
1tbsp Sweet Paprika
Salt and Black Pepper
Enough water to cook the shells.
Bay leafs and Parsley
Cook the shells for 30 minutes by boiling in water with a couple of bay leafs and parsley
And strain, discard the pulp.
Fry sliced onion and garlic with paprika.
Add the strained soup, because there’s nothing in this to thicken the soup so simmer, stirring occasionally to reduce the soup by about a third.
Blitz again, then serve, what a delicious flavour.
