250gms bread flour
250gms plain flour
8gms bread yeast
200gms chopped walnuts
150gms Roquefort Cheese.
1 beaten egg
300ml water + a little extra.
Chop the walnuts
Put the flour in a food processor bowl, put yeast on the flour on one side, put the salt the other, its important yeast and salt don’t meet till your mixing, add 300ml of water and knead the dough, use extra water if needed, it will depend on the type of bread flour you use, make a soft but not sticky dough. Knead for a couple of minutes.
Then using a dough hook continue to knead for about 5-6 minutes.
Roll out the dough and cover with the walnuts,
continue to knead by hand incorporating all the walnuts.
Place in a bowl, cover with clingfilm or a towel and leave in a warm place, allow to double in size.
Knock back the dough and roll into a rectangular shape,
Break up the Roquefort cheese and put over the dough
And push the cheese into the dough.
Then along the wide edge, roll like a Swiss roll
Slice into 2cm size slices.
push down slightly
And place on a baking sheet, they will double in size again so keep them apart.
Cover with a cloth and put back into a warm place to prove, again allow to double in size.
Brush with the beaten egg and bake at200°c for 20 minutes, till nicely browned.
Transfer to a wire rack to cool slightly.
