Before I give the recipe I would say I could have done this better, I used 4 rounds of Filo pastry, should have used 3, I put feta cheese on the spinach, what I would have been better doing would be to make a cheese sauce and use that. But none the less this worked and was tasty.

For each portion I used ;
4 rounds of Filo pastry
Spinach which I cooked earlier and squeezed well to remove the water.
Seasoning and melted butter.
There are to methods here, but for both lay a round of pastry on the work top, brush with butter, lay another sheet on top, butter, and continue with the rest.
Place salmon on top, season
1/ Take the pastry from the sides, fold it over the salmon, then roll it and pin with cocktail sticks
2/ Pull in the sides, then gather up the rest of the pastry to make a bag, pin the bag closed with cocktail sticks.
Bake at 180c for about 30-35 mins till the pastry is light brown and crisp.
