I’m looking for Diabetic friendly dessert recipes and have come up with this sugar-free brownie recipe, I’ve included a tablespoon of honey in this, I think it benefits from it, you can increase or omit the honey as you wish.
250 gms plain flour
200gms butter
3 Eggs
1 tbs of honey, 3 tsp Sweetener.
100 gms sugar-free Cocoa powder.
1tsp Baking powder
Handful of Cranberries

Preheat oven to 180°c (350°F)
Grease a 30X22 dish
Place Honey, butter and cocoa powder in a heat proof dish over a pan of slowly simmering water (Bain-Marie) and melt together stirring gently.
When melted remove from heat, in a separate bowl beat the eggs together and then whisk into the chocolate mix. Add the sweetener.
Sieve together the flour and baking powder and then fold into the chocolate a little at a time.
Add the cranberries and fold them in.
Place into the greased dish
Smooth out the brownie mix

and bake in the centre of the oven for 20 minutes, check after 15 minutes.
Lovely with custard.
