Remember the puddings of your youth, a simple pudding with just a few ingredients, steam treacle pudding was amongst my favourites. But they took a long time to cook, steam treacle pudding needed to be cooked for 2 hours. This version using a microwave takes just 3 1/2 minutes.
50g (2 oz) butter
50g (2 oz) caster sugar
50g (2 oz) self-raising flour or plain flour and a teaspoon of baking powder.
1 medium egg, beaten
2 tablespoons milk
2 tablespoons of jam or syrup
Vanilla essence
Cream together the butter and sugar until smooth.
Beat the egg and the milk together and slowly mix into the butter/sugar
Fold in the flour, add a little essence.
Put Golden syrup or jam in a microwave proof bowl, I added a slice of pineapple as well.
Pour the batter on top cover with cling film (make a hole in the cling film). Microwave on full power for 3 1/2 minutes.
Remove from the microwave and let the pudding rest for a couple of minutes, remove the film and tip the bowl over slightly and while turning the bowl use a pallet knife to ease the pudding from the sides.
Put a plate on top, tip over and lift the bowl clear
Serve with custard or ice cream.
