I had a few apples that were, well shall I say past there best, so wanted to come up with a quick easy pudding.
I peeled, cored and chopped the apples, put them in a sauce pan with juice a tiny ammount of water and added sugar and cinnamon. Put on a tight fitting lid and let them steam.
I then cut slices of bread into rounds, 2 slices per portion, and buttered both sides.
I put 1 slice in a pie mould, added the cooked apple, and put the other slice if bread on top, pushing the edges of the bread together to seal the pie.
Cooked till browned, plated, dusted with icing sugar, Vanilla ice cream, a little caramel and decorated with a sprig of mint.
How easy was that?
