I often see recipes on the internet, low fat, low calorie then when I look at the recipe I see so many ways to make the recipe even more healthier and lower calorie.
So heres my take on a recipe for delicious muffins I’ve changed a lot of the ingredients and weights in the original to achieve this my recipe.
As I took the original recipe from butterbaking.com the weights and measures are in cups, as I have measuring cups its not a problem for me.

1 cup rolled oats
1 cup home made low fat yoghurt
55g very low fat spead, (I found Bridelight 17 cal per 10g, in Super U)
2 1/2 tbsp brown sugar
1 egg
1/2 cup apples compot/puree
1/2 cup ground almonds
1/2 Plain Flour
1 tsp Mixed spice
1 tsp baking powder
1/2 tsp baking soda
1 apple, peeled, cored and diced
1/4 cup cranberrys
The recipe made 6 lge and 6 small muffins
Preheat the oven to 180 C
Stir together the oats and yogurt and set aside.
In a large bowl, cream the butter and brown sugar together with a wooden spoon.
Add the egg and beat to combine. Stir in the apple compot. Mix in the yogurt oat mixture.
Stir in almonds and flour, the mixed spice, baking powder, baking soda
Mix in the apple and Cranberrys gently.
Divide between prepared moulds
